Thanks to Raffles, the Singapore Sling cocktail has been a favourite of travellers for more than a century. The nine-course chef's tasting menu at Thomas Keller's NYC landmark restaurant, Per Se, is arguably the best in the city. Night after night, Keller's team work modern miracles with a changing menu that may include Maine sea scallops and Thomas Farms pigeon, Hudson Valley duck and oysters from Island Creek.
